What a fun day at the office for our REGISTERED SERVICE ANIMAL RAMSEY!    Flowers, balloons, cards, doggie cookies, doggie cupcakes and gifts for all those who entered who also owned a dog!

I have been researching raw foods, non-vaccinations and holistic living for dogs since Jake died suddenly last year of liver cancer.  Its not easy, I’ll say that much. Yes, there’s alot of information out there but the key is to find the “right fit” for your four-legged beast that gives him/her quality of life and of course, firm stools.  Its all in the poop!  Only vital nutrients are stored in the small intestine and keeping fats/proteins down so Ramsey’s liver doesn’t have to work over time has been the focus.

To all those who participated, came by to say hi or sent love – thanks so much!

PARTY PUPCAKES RECIPE  Ingredients: 1 large apple; 1.5 cups wheat flour; 1/4 cup oatmeal; 2 tsps baking powder; 1/2 tsp baking soda; 1/2 cup yogurt; 1/2 cup water; 1/4 cup good oil (grapeseed/efa/cod liver); 2 tbsps honey; 2 eggs; 1 cup grated cheese (Ramsey likes cheddar)

Frosting: 8oz Neufchatel cheese (lowfat cream cheese); 2 tbsps plain yogurt; 2 tbsps honey; 2-3 tbsps flour (rice/spelt/wheat)

Instructions: Preheat oven to 400. Grease/spray muffin tins.

Core, slice and mince the apple (use a  food processor if you have one). Set aside. In a large bowl, mix together flour, oatmeal, baking powder, and baking soda. In a medium bowl, blend together the yogurt, water, oil, honey, and eggs then stir in the apple and cheese, Add to the flour mixture and stir until mixed.

Spoon into the muffin tins, filling each cup about 3/4 full. Bake for about 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let rest in the muffin tins for a few minutes, then remove and set aside to cool.

For the frosting, combine the Neufchatel cheese (at room temperature), honey, and yogurt until smooth. Add enough floor to thicken the frosting to a good spreading consistency. Frost the pupcakes and you’re ready for a doggone good party!

Makes 16-18 pupcakes. If you prefer a single-layer cake, spoon the batter into a sheet pan and bake for an extra 15-20 minutes (or until a toothpick inserted in the center of the cake comes out clean).  Let the cake cool, then frost and decorate.

RAMSEY’S FAVORITE PUPCAKES have smashed bananas in them with melted carob chips as frosting.  Feel free to add other ingredients such as sunflower seeds (without shells), shredded carrot and almond butter. Extra treats or double batches can be frozen for future use.
